I focus on what I can eat, not what I can't
Some times I just want to be able to eat whatever I want. This feeling doesn’t go away after 25 years of being gluten-free, and 5 years dairy-free, but I have learnt to change my mindset. Now I choose to focus on what I can eat, not what I can't! The more I focus this way, the more I realise I'm not missing anything!
I have learnt to cook amazing food and you can too. When you learn to cook, you can cook the food you miss and life focuses more on what you can eat, not what you can’t. I had help on my journey from friends, family and the local coeliac society. They have so much information online and so many recipes to enjoy.
