Gluten free, Dairy free Christmas Banana Bread

Gluten Free Banana Bread is for Christmas! You may have noticed my family has a love of banana bread! This recipe is ideal for Christmas and the glaze is worth the effort as it really brings a wonderful Christmas finish to this gluten free, and dairy free banana bread.

I didn’t work fast enough to glaze this cake as the family had already started cutting into it before I could decorate it! Next time I will need to put a sign on it saying ‘Work in Progress, Hands Off!’

Ingredients:

175 g gluten free self raising-flour or our General All Purpose Gluten Free Flour

50 g almond flour

2 tsps. baking powder

1/2 tsp ginger

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp salt

2 large eggs

100 g caster sugar

100 g light muscovado sugar

2 ripe bananas

1 tsp vanilla extract

125 ml vegetable oil

1/2 cup of dried cranberries

1/2 cup of walnuts (chopped roughly)

1/2 large orange grated zest and juice in the cake (approx 60 ml)

Ingredients: Optional Runny Icing Glaze

250 g icing sugar

Method:

Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4 and line the loaf tin.

In a mixer or bowl add all the ingredients of eggs, sugar, bananas, flavouring and oil and whisk together.

Then stir the dry ingredients in until mixed.

Transfer the cake mix into the prepared loaf tin and place in oven for 50 minutes.

Bake until golden and a skewer inserted in the centre comes out dry. 

Let cool completely in tin before transferring to a wire rack.  


Once the cake is cool mix up your icing glaze. Add more icing sugar if you would like a thicker topping. This was more than enough glaze for this cake if made in a loaf tin. Alternatively make as a tray bake and cut into individual squares before coating each one in the glaze and then sprinkles. They look wonderful at Christmas!


Additional Notes:

Make this into a tray bake but remember to reduce the cooking time (dependent on size of tin).

Add extra spice if you wish. This is the level of spice I use for my children, but if I was making this just for myself I would add more!

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
