Pimm's Fruit Salad
This summer fruit salad has a Pimm’s flavoured syrup and reminds me of summer all year round. I love to serve this at a summer party and it is always a popular desert. Gluten Free, Dairy Free and has a fantastic twist on an old favourite.
Ingredients:
200 ml of water
200 g of sugar
3 to 6 tbsp. Pimm’s No. 1
Lemon slices
Cut fruit such as mango, kiwi, melon, berries, apple, orange, pears, pineapple, grapes, pomegranate
Cucumber
Herbs such as mint.
Method:
In a saucepan combine the water and sugar and add the Pimm’s and lemon slices. Bring to boil on a low heat until sugar has dissolved. Taste to see if it is to your liking and add more Pimm’s if required. Leave to cool.
Cut the fruit that you enjoy. I like to add cucumber and mint as this is often found served in a glass of cool Pimm’s and Lemonade.
Toss the fruit in the cooled syrup and then place into the serving bowl and top with further mint.
Additional Notes:
Add all the syrup to the fruit if you desire. My family prefer to save the rest for coffees and cocktails. Any remaining syrup can be stored in the fridge for a week.
Add the juice of an orange instead of water. Cooking is all about your preferences on how things taste.
Equipment Used:
Saucepan
Serving Bowl.
