Gluten Free Dairy Free Custard Sponge Cupcakes

These gluten free, dairy free custard sponge cupcakes are a delightful treat that everyone can enjoy, especially my son who absolutely loves this flavour. With a light and fluffy texture and a delicious custard flavor, these cupcakes are perfect for any occasion.

David’s Custard Sponge Cupcakes

Gluten-free, Dairy-free David’s Custard Sponge Cupcakes

Ingredients for Dougnuts:

270 g General All-Purpose Gluten-Free Flour

2 tsps. gluten free baking powder

115 g gluten free custard powder

410 g caster sugar

250 g dairy free butter

250 ml rice milk

2 tsp. vanilla extract

4 eggs separated


Optional:

Icing for the top of the cakes

Custard Buttercream Icing


Method:

Preheat the oven to 200°C / 180° Fan / 400°F / Gas Mark 6.

Line the required cupcakes tins with cupcake liners.

In a large mixing bowl, mix the flour, custard powder, and baking powder.

In a separate small mixing bowl, whisk the milk, egg yolks and vanilla.

Whisk the egg whites until soft peaks form.

Cream the sugar and butter together.

Add the wet ingredients to the sugar butter mix. Don’t worry if the mixture looks like it curdles slightly - just keep mixing.

Add the dry ingredients in and mix until combined.

Finally add the egg whites, folding them in gradually.

Divide the batter evenly among the prepared cupcake liners.

Bake for 18-20 minutes or until a toothpick inserted into the centre comes out clean.

Allow the cupcakes to cool in the tin for 5 minutes then transfer them to a wire rack to cool completely.

Decorate and serve!


Additional Notes:

The cakes in this picture were covered in fondant icing, but I often will use the custard buttercream icing and top these with a gluten free custard cream biscuit or just some sprinkles for extra detail.

You can store the cupcakes in an airtight container at room temperate for up to three days. In the fridge, they will store longer (if they aren’t eaten that is). The gluten-free cupcakes also freeze beautifully.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
