Fresh Watermelon Cake
A fresh melon cake is a wonderful way to celebrate an occasion or simply serve at the end of a meal. If you check out pictures online, there are many ways you can build a fresh melon cake. My children made these. Watermelon is the staple to use as they can be large and so give you the size required for a three-tier cake. The ingredients in this recipe are more a guide rather than what you need to purchase. Use fresh, delicious fruit and use your imagination on how you want to build your creation.
Ingredients:
Watermelon
Melon
Fresh fruit such as:
Grapes
Blueberries
Strawberries
Blackberries
Kiwi
Method:
Cut the watermelon and melon into tier size slices.
Cut off the peel but keep the slices intact.
You could have several tiers if you require. It can look fantastic as a three-tier Watermelon Cake.
If you are using multiple tiers, then try to ensure that each tier is a similar height. The diameters should reduce as you go up the cake.
Choose your serving plate of choice. One with a non-slip surface is a good idea!
Place one tier on top of the other and so forth.
You can reinforce these with skewers or toothpicks if you require. Just remember you have put them there!
Ensure the tiers are well secured before you arrange other fruits.
It’s a good idea to have a design in mind before you begin.
I like to cut some fruit out with cookie cutters.
You can attach the fruits to the watermelon using toothpicks if you require. I like to build the fruit up naturally though, and with children in the family, it’s safer not to use toothpicks for securing.
Refrigerate until you need to serve.
Additional Notes:
Use whichever fruit you wish to garnish this cake.
Hide some fruit inside the tiers!
Serve with dairy-free cream or dairy-free vanilla ice cream.
