Hummus

I love Hummus and I always used to buy it from the supermarket, but it is so incredibly simple to make and it tastes amazing when you make it yourself.

Ingredients:

400 g tin of chickpeas

2 tbsp. tahini

Juice of 1/2 lemon

1 tbsp. ground cumin

1 tsp. ground coriander

Generous glug of olive oil

1 garlic clove and 1 tbsp. salt

Options to garnish:

Chickpeas

Toasted pine nuts

Paprika

Chopped parsley.

Method:

Place the drained chickpeas, tahini, lemon juice, cumin and coriander together in a food processor or blender. Add a glug of olive oil and blend.

Crush the garlic with the salt and add more olive oil if you require to the hummus and blend again.

Taste the hummus and add more spices or lemon juice as you require. Add more olive oil if you wish it to be a smoother texture.

Once you are happy with the consistency, place into a bowl. Top with the garnishing that you choose. I tend to use paprika for the colour and flavour. Serve with vegetables. crackers or breads.

Additional Notes:

You can use dried chickpeas if you wish.

125 g dried chickpeas

1/2 tbsp. bicarbonate of soda

Pinch of salt

Pinch of bicarbonate of soda.

Soak them overnight in plenty of cold water with the bicarbonate of soda. Then drain and rinse. Place them in a saucepan and cover with water. Add the pinch of salt and bicarbonate of soda and cook for 2 hours or until soft. Once soft, drain and leave to cool. Please remember to keep the water topped up during the cooking process and check your chickpeas towards the end of the cooking process. Cooking time varies with the freshness of the dried chickpeas and the type of water where you live.

Health and Auto-immune Diseases

I have auto-immune diseases and expected to be on medicine for the rest of my life, but I didn't want to live like that. My rheumatology Doctor was so supportive of the change I wanted to make, and with their help, I now manage my auto-immune diseases by being strict with my diet.

Photography

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Some of these images were reproduced as watercolours. Our favourite images we display at home and friends often asked where we had purchased the pictures! Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
