Ingredients:
4 eggs
4 cups of grated carrot
2 cups of flour
1 cup of light brown sugar
1 cup of white sugar
1 1/4 cups of oil
2 tsp baking soda
1 1/2 tsp cinnamon
1 tsp vanilla
1 tsp salt
Method:
Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4
Lightly grease or line 20 cm cake tin.
Place all the ingredients into a bowl and mix until combined.
Bake in the oven for 40 to 45 minutes until browned.
Leave for 5 minutes on the tray to cool and then carefully transfer them onto a cooling rack.

I love adding blueberries, dried fruit and nuts to this cake. Experiment and see what you like to add.
Gluten free flour changes vastly - I have used flours before in this cake that made the grated carrot float to the top of the cake!
