Nut Butter Energy Ball

A simple one bowl no-cook recipe for energy balls. Add the flavours you like to this delicious recipe.

Ingredients: 

1 1/4 cups gluten free oats

2 tbsp. mix of chia seeds and flaxseeds

1/2 cup nut butter

1/3 cup of honey (maple or agave also suitable)

1 tsp. vanilla

1/4 tsp. salt

1/2 cup of your flavouring choice (chocolate chips, dried fruit, nuts)

1/4 tsp spice of your choice (cinnamon, mixed spice)

Desiccated coconut for rolling energy balls in (optional)

Method: 

Place all the ingredients into a bowl and mix until combined.

The dough needs to be slightly sticky and hold together when squeezed lightly.

If the mixture is too dry, then add more nut butter, if too wet, add more gluten-free oats.

Once you are happy with the consistency place the bowl in the refrigerator for at least 30 minutes. This cools the mixture down and makes them easier for you to roll later on.

If you have decided to cover them with coconut, then place this on a plate now.

Remove the mixture from the refrigerator and shape into energy balls to the size that you wish.

Roll in coconut if you wish. I do this as I find they are less sticky in lunch boxes and easier to transport.

Store the energy balls in the refrigerator for at least 2 weeks.

Additional Notes:

Do you love chocolate? Add 2 tbsp. cocoa powder to the dish for an extra chocolate hit. Don’t be afraid to make this dish uniquely yours!

These energy balls freeze perfectly for up to 3 months.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
