Pork Schnitzel
Gluten-free, Dairy-free Pork Schnitzel is fun to make at home. My children love preparing the pork and dipping it into the egg and breadcrumbs before I cook it.
Ingredients:
900 g pork chops
1/3 cup rice flour
1 tsp paprika
1/2 tsp pepper
1/2 tsp salt
2 eggs
2 cups gluten-free bread crumbs
Oil
Optional:
Garlic
Herbs
Spice such as Chilli
Method:
Trim the pork chops of fat. You may need to slice them if they are too thick. About 1/2 inch thick is perfect.
Place the pork chops in a bag and hit them with something heavy. I let my children use a rolling pin for this.
They need to end up being between a 1/4 and a 1/8 inch thick.
In a bowl, beat the eggs. In another bowl place the rice flour and in another the gluten-free breadcrumbs with paprika, salt and pepper (mix them well).
Place the pork into the egg and cover, then place in the rice flour. Place back into the egg and finally into the breadcrumbs.
Heat a large non-stick pan over medium heat and add enough oil to cover the bottom of the pan.
Once the oil is hot, add the pork (a few at a time) and cook for 3 - 4 minutes each side. They need to be cooked through and golden in colour.
Reduce the heat if they are browning too quickly.
Remove from the pan and place onto a paper towel before serving.
Additional Notes:
This can be frozen. I reheat ours in the air fryer for 10 minutes.
