Sweet Potato Chocolate Brownie
A fantastic brownie and you would never guess it was made with sweet potatoes. No flour, no added sugar. It tasted like dark chocolate and had the consistency of fudge. I serve this with Coconut Whipped Cream and fresh berries.
Ingredients:
I cup of mashed sweet potato
1/2 cup of nut butter or nut spread (of your choice)
1/2 cup of cocoa butter
1 teaspoon of vanilla extract
1 teaspoon cinnamon
2 tablespoons of dairy free butter
Method:
Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4.
Line a small brownie tin with greaseproof paper.
Place all ingredients into food processor or blender and blend until smooth consistency.
Transfer to pan and level.
Bake for 12 to 15 minutes.
Cool completely in tin before slicing.
Additional Notes:
Serve with Coconut Whipped Cream and Berries of your choice.
This can be frozen.
