Baked Apples

Gluten Free Dairy Free Baked Apples

A recipe from my childhood, I simply love Gluten Free Dairy Free Baked Apples. Here is a basic recipe which you can easily adapt for your taste.


Ingredients:

1 tbsp brown sugar

1 tsp cinnamon

1/4 tsp ground nutmeg

1/4 cup pecans (finely chopped)

4 medium apple

1 tbsp dairy free butter

3/4 cup water (boiling)

Method:

Preheat the oven to 175°C / 160° Fan / 350°F / Gas Mark 4.

Combine the brown sugar, cinnamon, nutmeg, and chopped pecans in a bowl. This will serve as a filling for the baked apples.

Core each apple using a knife or apple corer. I prefer to leave roughly ½ inch of the apple at the bottom to serve as a sturdy base.

Fill each apple with filling and top with a small square of dairy free butter.

Bake apples for 35 – 40 minutes in a baking dish filled with hot water. Apples should be tender but not overcooked.

Additional Notes:

Add nuts of your choice or dried fruit. You can make the baked apples uniquely yours.

Serve as a pudding with Coconut Whipped Cream, or Vanilla ice cream.

Photography

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Some of these images were reproduced as watercolours. Our favourite images we display at home and friends often asked where we had purchased the pictures! Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
